Pumpkin pancakes

For those of us who can't get to an IHOP for the pumpkin pancakes, I made up a batch of them this morning and thought I would share the recipe with y'all.
3/4 c white flour
3/4 c whole wheat flour
1 Tbsp baking powder
1 tsp sugar
2 large eggs
1 Tbsp butter, melted
1 1/3 c milk (I used 2%, can use skim to cut calories and fat)
1/2 c canned pumpkin
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp vanilla
Sift dry ingredients together. In a large measuring cup, whisk together milk, eggs, pumpkin and vanilla. Pour over dry ingredients and whisk just to combine. Pour butter over batter and drag a fork through it just to combine. (I know it sounds odd, it keeps the batter from getting overmixed though). Heat a griddle over medium, medium low heat. Spray with nonstick spray and cook pancakes using 1/2 c batter each. Turn over when the edges and top form bubbles. Makes about 11 pancakes. Serve with FF whipped cream and a sprinkle of cinnamon sugar, or a drizzle of maple syrup.
