Resting Days

Hi Guys/Gals,
A question has been lingering in my mind for quite some time now.
Studies seem to show the more you do some physical activity the better your body respond to it, so if you train more in a "task" you'll be better at it. Having said that every single trainer and exercise expert will probably tell you that rest is as important as exercise, at least acording to what I've been reading... the thing is I haven't found any information on the best way to rest.
Say some of us (me included) workout at least 5-6 days a week, some 7 days a week even but when do we rest? Is it better to take a day of total inactivity (regarding exercise) or is it better to take a slow walk say for a long enough time or distance to keep you active?
Yes we all know the watever works best for you, but I'd like to know what my fellow exercise pals think about this? What do you do, is it better for you to take a couple of days off a week or even more perhaps or just reduce intensity a couple of days a week but keep training?
