I was just looking at healthy recipes online and thought I'd share my favorite find & see if anyone else wanted to share too! ) Copy & paste to here! Modify it to make it healthier if you wish and try to include the calories per serving as well
If you don't mind going one step further we could make this really great...add to the food database as "MFP Thread Recipe - Name of your recipe" And be sure to check YES for sharing with other MFP members.
If you have the time MFP is still building their database, and you can add it there too of course! but I know that the database is not available yet, and I'm hungry now So, hope people like this idea, thanx everyone!!

Mango Chicken Chimichurri:
332 calories/tortilla
Ingredients
•1 cup chopped mango
•½ cup chopped red bell pepper, seeds and ribs discarded
•½ cup chopped cilantro
•½ cup chopped fresh parsley
•¼ cup fresh lime juice
•3 tablespoon white wine vinegar
•1 tablespoon minced garlic
•1 tablespoon dried oregano
•2 teaspoons chopped fresh jalapeno, with seeds
•Pepper
•1 tablespoon olive oil
•14 oz chicken, cut into ½ -inch cubes
•One 14 ½ ounce can black beans, drained
•1 cup cooked long grain white rice, warm
•6 10-inch whole wheat flour tortillas
Preperation
Combine the mango, bell pepper, cilantro, parsley, lime juice, vinegar, garlic, oregano, and jalapeño in a medium bowl. Season with ¼ teaspoon pepper.
Heat the olive oil in a large nonstick skillet over medium-high heat. Add the chicken; season with ¼ teaspoon salt and ¼ teaspoon pepper. Cook chicken until juices run clear. Add the beans and rice. Cook until beans are warm, 1 to 2 minutes. Remove from heat Add the mango mixture; stir well. Divide among the tortillas and wrap. Enjoy!!

1 tbsp cilantro
salt and fresh pepper
Directions:
Combine beans, corn, tomato, onion, scallion, cilantro, salt and pepper. Mix with lime juice and olive oil. Marinate in the refrigerator 30 minutes. Add avocado before serving.0 -
