Cheesy Ham and Cauliflower Chowder

Ingredients
1/2 c. Chopped onion (Vidallia was yummy!)
2 Tbsp. Olive oil
2 c. Diced ham
1 vegetable bouillon cube
3 c. diced potatoes
4 c. diced cauliflower (1 med. head)
2 c. frozen peas
1 can nonfat evaporated milk (12 fl oz)
1 c Shredded Kraft 2% Sharp Cheddar Cheese
Directions
Sautee onions in olive oil in a large sauce pan. Salt and pepper to taste.
Add diced ham and let brown slightly (just to bring out the flavor as the ham should be already cooked).
Add potatoes and bouillon cube and fill pan almost half way with water.
Bring to a boil, then add cauliflower.
When cauliflower is almost done, add peas, evaporated milk, and sharp cheddar, stirring occasionally.
Cook for about 5 more minutes and serve.
Makes 12 1-cup servings.
