Parmesan-Dijon Chicken

6 skinless, boneless chicken breasts
3/4 cup dry breadcrumbs
1/4 cup grated Parmesan cheese
2 tablespoons reduced-calorie margarine, melted
3 tablespoons Dijon mustard
1 tablespoons water

Heat oven to 375 degrees. Mix breadcrumbs and cheese in a large plastic bag. Combine mustard, melted margarine and water in a shallow dish and mix well. Dip each breast into the margarine mixture then place in the bag with the breadcrumb mixture and shake to coat well. Place chicken in a shallow baking dish sprayed with nonstick cooking spray. Bake uncovered for 20-30 minutes or until no longer pink in the center.

Serving Size: 1 chicken breast

Cholesterol: 140 mg
