    SINGLE SERVING BANANA PUDDING

    2-3 vanilla wafers, crushed
    1 Jello SF FF Vanilla pudding
    1/2 chopped banana
    dollop FF Kook whip.

    Put the vanilla wafers in the bottom of a bowl, cut up banana half and put on top. Put pudding cup over that and add koolwhip.
    If you want the wafers to soften, put in the fridge a while. If not, eat right away.

    This is also good with choc pudding but use crushed graham crackers, raspberries or strawberries and Kool Whip.

    I put individual FF Classic Vanilla yogurt cups in the freezer. So easy and satisfies my ice cream cravings.

    It's a vegan site, but you could easily just add regular milk when "non dairy milk" is called for (I do). If you scroll down to the "baked goods" section she has a few good ones like the single lady cupcake or single serving strawberry shortcake. Actually, look over the whole list, up at the top I see some cookie dough balls for one, and I know (from frequenting her blog) that a lot of other recipes on that list are single serving, you just have to poke around and look at the actual recipes to find out (some are 1 serving but they just don't say it in the title). If you go to http://chocolatecoveredkatie.com/chocolate-covered-recipes/ then you can also see the pancake recipes and the healthy milkshakes, I know they're single serving and delicious! Seriously these recipes have been such a help for me when I have a craving for something (like cookies) but I don't want to make a ton of cookies that I know I'm going to eat all of.

    1/4 A CUP OF BROWN BEANS
    rise very well...

    1 Tbsp of unsweented coco powder
    2 Tbsp of splenda
    pinch of salt

    mix together and microwave for 30 sec

    Tastes just like chocolate and is 60 calories :-)

    I use nonfat vanilla Chobani and mix in about a tbsp of cocoa powder. :) YUM

    Sometimes if I want something sweet after eating I roast a marshmallow on the stove on the end of a fork or shishkobob stick. It's sweet and one is enough.I just looked up the calories and it was 25 for a great value marshmallow.

    Funny, I have a graham cracker idea too. Mix equal parts ricotta cheese and fruit preserves. Put it on top of a graham cracker. It tastes just like a fruit cheesecake!

    That sounds incredible! I'm definitely going to try that. I'm addicted to part skim ricotta. :)

    I love vanilla yogurt (lo-fat) with some grapes. The yogurt is sweet and the grapes add a nice pop/crunch.

    "Evil Brownie in a Cup"

    2 T. cocoa powder
    2 T. flour (use white whole-wheat)
    3 T. sugar
    2 T. EVOO
    2 T. water
    dash of vanilla
    dollop of natural PB or some chocolate chips

    Microwave on HIGH for 50 seconds: Single Serve Brownie. Good fat. All you gots ta worry about is the empty carbs from the sugar. I haven't figured out how to get past that one....

    I LOVE rice pudding and to replace that (and make it way healthier!) I use fat free vanilla greek yogurt and cooked quinoi (sorry about the spelling) and mix together 1/4cup of each. Lots of protein and flavour!:)
