Slice in half and toss with some sort of light italian vinagrette with cucumbers.0

I put them on kabobs, or lightly oil and put them under the broiler just until the start to pop! in chicken salad, or tuna salad, in stir fry (added at the end or they will mush)0

I have an over load of cucumbers so I make a nice cool salad.
Cucumbers
grape tomatoes
red onion
fresh cheese either mozzrella or feta
fat free italian dressing...
Its GREAT0 -
We love to cut them in half and lightly saute them in olive oil with s&p then use them as topping for eggs or pizza or chicken breast or whatever! It has a bit of a sun dried tomato taste to it....in fact you could probably add a splash of balsamic to bring that out even more! Mmmmmmm!!!0

I cook chicken breasts in olive oil and throw our fresh cherry tomatoes and basil in there with them. Salt, pepper, basil, evoo, toms at the end. Add a bit of fresh lemon juice while it's cooking and toss with whole grain linguini0

I love to slice them, add them to a bowl of cut mozzarella chunks, drizzle some olive oil over it, add some salt, pepper, and chopped cilantro. It's a summer staple in my house, especially for cookouts.0

I love roasted cherry tomatoes!! So good on top of so many things. I also love to stuff them with a mixture of avocado, non-fat sour cream, and green onions, as a yummy snack.0

I just ate a ton of them today! I cut them in half and tossed them with a chopped avocado, leftover grilled corn cut off of the cob, some lime, cilantro, green onion, and garlic. Super delicious and summery! :happy:0

This is what I do, too. I add some chopped basil and use oil & vinegar dressing instead of italian.0 -
Halve them, cut up a cucumber into small bite size cubes and marinate in italian dressing, or Amys all natural ****ake Sesame dressing. Let marinate for an hour or so. Mix with some quinoa or jasmine rice that has been cooked in chicken stock and a little bit of fresh grated ginger.
My friend gave me the above recipe the other day and I plan on trying it tomorrow!0 -
