So I just made what I consider to be a fabulous Veggie Omelet. I've added it to the food database (just search my user name) and the nutritional info in there includes EVERYTHING that I put in it. I even created 2...one with Blue Cheese and one without...your choice! The recipe:

1 large egg
2 large egg whites
Salt (to taste)
Pepper (to taste)
Garlic Powder (to taste)
Dill weed (to taste - I used a tbsp...I love dill!)

Whisk these ingredients together

Prepare your veggies! I steamed them to make them a little al dente, but you can prepare them how you like! I used 6 oz. total of veggies in equal proportions so 1.5 oz each

Zucchini
Yellow Squash
Asparagus
Onion
Salt (to taste)
Pepper (to taste)
Chives (about a tsp)
Garlic (1 clove minced)

Cook the omelet! Add your veggies. When almost completed, add a tbsp of Blue Cheese...or not...depending on your mood and your desire! :) Hope you enjoy!!!

You had me when you added Garlic!!:drinker: It sounds Delicious!!

The only way to make it any better would be to add Spinach.
