Broccoli Soup

Broccoli Soup (cook time 30-35 mins)

Ingredients:

1 Stalk of fresh broccoli (including stems) chopped
1/2 a Onion chopped
1 large potato peeled & cubed
1 Stalk of Celery finelly chopped
1 Parsnip chopped
2 tsp of Olive Oil
2 Vegetable stock pots dissolved in 600 ml of water
350ml of Low Fat Milk

Preparation:

Heat oil on medium heat in a soup pot. Gently sauté the onion and celery for 4-5 minutes, until onion is soft. Add the cubed potato, chopped parsnip and chopped broccoli, followed by the stock pot mixture and milk. Bring to a boil, then reduce heat, cover and simmer for 20 to 25 minutes, until vegetables are tender.

Allow soup to cool slightly, then transfer to a blender in 2-3 batches, and blend until smooth. Return soup to pot and heat gently until ready to serve.

Serves 4 to 6 People

Nutritional info based on 6 servings (200ml approx):

Calories 96, Calories from Fat 16. Total Fat 1.8g (sat 0.3g), Cholesterol 1mg, Sodium 83mg, Carbohydrate 14.2g, Fiber 3.4g, Protein 5g

    so..i made this last night..it is really good!
    i have never used a parsnip before though..those suckers are so hard to chop up..are they always like that or did I just have a tough one?

    i froze the soup for my lunches..yeah :bigsmile:
