chicken recipes needed please!

I've got chicken thighs and chicken breast that I need to use. normally, we do grilled or baked. I'm looking for something that is more of a casserole or a one skillet meal type thing as I only have 2 large chicken breast. really any chicken recipes I'd love to have :)

    How about a chicken stir-fry? Lots of vegetables, with 75g of pasta or some spaghetti. Or you could just make a simple Caesar salad. Yummy and low cal :-)

    For a one skillet meal both fajitas and stir fry are perfect. Add in any veggies you have and serve. Just watch the tortillas, rice, sauces and toppings, dont overdo on those!

    i had the same issue last night.. so i made fajitas... DELISH and healthy.. just chopped up the chicken added some peppers, onions, and mushrooms, served on a tortilla with a little bit of cheese and sourcream and salsa.. so delish! i usually sneak in some black beans but we were out last night... so i had a few chips..

    On of my faves is a WW recipe. It is public "Balsamic Chicken w/ Mushrooms" in google and you have it.

    I put a slice of avocado and then a tomato on top of the chicken with a bit of parm cheese! Yummy!

    i usually stir fry up chicken breast and then add veggies whatever is in the house. add chicken broth and then thicken i up with corn starch. I serve it over brown rice, noodles, whatever carbs you have or you can put it in a wrap or eat it as is.

    thanks for all the great ideas :) I ended up not cooking but I will tonight and I am thinking chicken fajitas, yum!

    Chicken Fajitas are soo yummy!
    Also because you can pretty much add anything into it you want it gives you alot of freedom to customize it and spice it up.
    I love to use red yellow and green peppers and onion and then I take a lime and slice it up and just before I eat the fajitas I squeeze a little bit of lime on it.
