Stuffed Eggplant
My dinner last night:
Cut eggplant in half lengthwise. Rub cut surface with olive oil and bake cut side down at 190°C for 30 min.
Scoop out pulp. Sauteè pulp and 1/2 small, chopped onion in butter or oil until onion is soft. Add appx. 100 grams of tuna. Stir. (I think this would be good with sauteèd celery, too).
Spoon into the shells of the eggplant. Top with mozzarella cheese and bake for an additional 30 minutes.

This was really good. I don't measure anything ever when I'm cooking and I'm sorry that I don't have the amounts in ounces or the calorie totals, etc., but if you just tally everything up, then divide in half, because one half of the eggplant would be one serving.
Afterward we had roasted chestnuts
