Easy Spinach and egg breakfast

I am not a morning person. I like easy when I first wake up, but I also want good food. This is one of my favorite breakfasts, and my sleep deprived brain can take a backseat while I make it!

1 lg. egg
1/4-1/3 c. frozen chopped spinach
(I defrost one of the frozen spinach boxes and keep it in the fridge for the week)
1 Tbsp dehydrated minced onions
(if you're so inclined you can chop fresh. I am not at 7a.m.)
1 Morningstar breakfast patty

Stick the breakfast patty in the micorwave for 30-45 seconds. Break it apart with a fork in small pieces. Scramble the egg with the spinach, onion and sausage pieces. Pour into a frying pan (sprayed w/cooking spray) and scramble as usual.

Its a great way to get veggies in in the morning, and the meatless sausage cuts down on fat and tastes great (I looooove regular breakfast sausage, but had to cut it out of my diet).

    I'm going to try this! sounds like a quick filling breakfast. I have the spinach but will have to get the sausage.
