I modified this recipe from Cheddar's to make it healthier and smaller portions.
Makes 2 MINI Loaf pan servings (so double or triple for more servings)
500 calories/serving
2 MINI Loaf pans
4 oz. whole wheat spaghetti noodles(cooked)
1/2 cup mozzarella cheese
1/2 cup part skim ricotta cheese
1/8 cup 2% milk (more or less)
1/4 cup grated parmesan cheese
1/2 tsp oregano
1/2 tsp basil
1/2 tsp pepper
1/2 tsp garlic
1/2 tsp salt
1/2 Tbsp olive oil
1 cup Prego Traditional Spaghetti Sauce(or any other sauce)
1. Preheat oven to 350 deg.
2. Cook spaghetti
3. In a mixing bowl stir together mozzarella, ricotta, milk, parmesan, oregano, basil, pepper, garlic, salt, and olive oil. DO NOT mix in spaghetti sauce
4. Add the spaghetti noodles to the above cheese mixture. Mix until spaghetti is evenly coated with mixture
5. Spray Mini loaf pans with cooking spray
6. Place spaghetti mixture into loaf pans.
7. Cover dishes with aluminum foil and bake at 350 deg. for 30 min.
8. When finished cooking turn pans over onto a plate, then top with 1/2 cup spaghetti sauce
9. enjoy!!
