Lower Cal Pancakes (Gluten Free and Dairy Free)

Just experimented with this and they turned out SO GOOD, fluffy and yummy, that I had to share!


1 1/4 cup flour (I used Bobs Red Mill All Purpose GF flour mix)
2 TBL sugar
2 1/2 tsp baking powder
1/2 tsp salt
1 tsp xantham or guar gum (for gluten free flour only)
1 egg
1 1/4 cup milk (I used Unsweetened Coconut Milk)
1 TBL EVOO
2 1/2 TBL unsweetened applesauce


This made about 10 medium sized pancakes and my calculations were 86 cals per pancake.
