Zucchini Bread Recipe

I have been craving zucchini bread but, I'm hesistant to purchase it from the store. Do any of you have a tasty, healthy recipe they'd like to share with me? Thanks in advance!

    Same here. We have a dearth of zucchini from our garden.

    Got this from a friend, and it isn't inherently healthy, but I added some modifications that could be done to make it better.

    Chocolate Chip Zucchini Bread
    3 eggs
    1 c oil
    2 c brown sugar
    3 c grated zucchini
    3 tsp vanilla
    3 c flour
    1 tsp salt
    1 tsp baking soda
    ½ tsp baking powder
    3 tsp cinnamon
    ½ tsp nutmeg
    ½ c chopped walnuts (optional)
    ½ c chocolate chips (this gives a hint of chocolate, throw up to a cup in for extra chocolaty!)

    Preheat oven to 325 and grease 2 loaf pans. Beat eggs until light and fluffy. Add oil, sugar, vanilla; mix. Add flour, salt, soda, powder, cinnamon and nutmeg; mix. Add zucchini and mix until well blended. Add nuts and chocolate chips. Bake for approximately 1 hour.

    Substitutions: 1½ c whole wheat flour for the same amount of all-purpose flour. Applesauce for the oil.

    I found a yummy banna bread recipe on the all bran site that is good and low cal. You might want to look ther, you can always swith banna for zuchini...yum!

    I made these with the oil last time, but I'm sure you can sub for applesauce.

    I just saw one yesterday on Gina's skinny taste website. It was a lowfat chocolate chip zuchinni bread recipe. I went ahead and copied it and want to make it soon. She has some wonderful recipes!!!

    This is my recipe. I have used it for several years and everyone loves it! Not sure on the healthy quality, but the taste is wonderful :)

    3 eggs
    1c oil
    2c sugar
    3c flour
    3tsp vanilla
    1tsp baking soda
    1tsp baking powder
    1tsp cinnamon
    2c grated zucchini (I usually add more (sometimes double), it makes it even more moist)
    1/2c nuts (if desired)

    Cream together eggs, oil, and sugar. Stir together flour, salt, powder, soda, and cinnamon. Add the dry ingredients to the egg mixture. Then add zucchini, vanilla, and nuts. Bake in a loaf pan.
    2 large or 3 small loaves
    350 degrees for 60 mins
    325 if pyrex pan

    I've been working on a healthier recipe, and while I'm not satisfied that it's perfect yet, my husband and kids eat them up fast whenever I bake muffins. Which means my kids are eating squash & zucchini and not complaining about it. :) This is the current recipe I'm working with.

    1-1/2 c. whole wheat flour
    1/2 c. white sugar
    1/2 c. brown sugar (packed)
    2 tsp. baking powder
    1/4 tsp. salt
    1 tsp. cinnamon
    1/2 tsp. ginger
    1/2 tsp. nutmeg
    1/4 tsp. cloves
    1 c. pureed yellow squash (boil first)
    1-1/2 c. shredded zucchini (squeeze most of the liquid out)
    1 egg, beaten
    3/4 c. milk
    1 Tbl. butter, soft

    *Mix dry ingredients in one bowl & wet ingredients in another. Combine. Spoon into muffin cups (greased pan or paper/foil cups), filling each most of the way. Bake at 400 degrees for 16 minutes.
    *Makes 12 muffins. Each muffin = 151 calories / 32 carb / 2 fat / 4 protein / 3 fiber / 162 sodium / 19 sugar

    (I'd love some feedback if someone tries to make these. I feel like something is 'off' with the flavor, but my husband just keeps saying they're good the way they are. I'm planning to add some vanilla extract to the next batch. And I'd like to figure out how to lower the sugar content.)

    I followed this recipe. I used egg whites for the egg; splenda for the sugar and cut the chocolate chips down to 1/3 cup. It was excellent and the calories were closer to 110 per slice.
