Bean Salad (Salsa) - Delicious!!

BEAN SALAD / SALSA
1 15oz can black beans (rinsed and drained)
1 15oz can pinto beans (rinsed and drained)
1 12-15oz Shoepeg corn (you can use whole kernel corn)
1 c. chopped green pepper
1 c. chopped celery
1 c. chopped onion
1 small jar pimentos (drained)
Jalepenos, chopped to taste (OPTIONAL)
Dressing:
1/4 c. sugar
1/4 c. vinegar
1/4 c. olive oil
In a bowl, combine pinto and black beans, corn, peppers, celery, onion, pimentos and jalapenos. In a seperate microwave safe bowl, heat sugar and vinegar in microwave in short increments stirring frequently until the sugar dissolves. Let it cool and slowly add the olive oil. Mix as you add. Pour over bean mixture. Chill in refrigerator before eating.
You can serve this with baked tortilla chips but I eat it as a bean salad versus the salsa to cut down on the calories. Next time I make it I plan to try it with Truvia sweetner as well. This is delicious so I hope you enjoy it as much as I do. Enjoy!!
