Yeah, I didn't know what to call it so bear with me. LOL
Anyway, I was hungry and I had a piece of chicken breast that was thawed out so instead of just grilling it to eat, I decided to be a little creative. Yes, I made this up on my own, but if you've seen the recipe somewhere else, it's a coincidence, I swear!
Here goes:
Chicken breast (as much or little as you want; mine was a large one, perhaps 6-7 oz.)
Swiss Cheese - about 1.5 oz
Mushrooms (I used canned [drained] mushrooms) - .5 cup
Onions - a couple slices
Olive Oil - 1.5 tbsp
Grated parmasean cheese
Seasoning/spices (I used garlic powder, chicken seasoning, paprika, lemon pepper, and Mrs. Dash original)
1. Chop chicken in chunks then season it, chop onions how you like, shred Swiss cheese and set aside
2. Saute onions and mushrooms in a small skillet with EVOO; set aside
3. Cook chicken chunks in larger skillet or wok in EVOO
4. When chicken is almost finished, add Swiss to skillet and stir a bit
5. Add onions and mushrooms to chicken and Swiss; stir some more!
6. When its done to your liking, add a couple shakes of parmasean cheese, cut off your burner, cover skillet, and let it sit for like 20 seconds.
That's it, it's done. You can eat it like that, but what I did was set some of it on some lettuce that I shredded and ate it all together. It was soooooo heavenly! It took me like less than 15 minutes to make including prep! From the measurements I gave earlier, I served myself half of what was in the skillet and here's the nutritional info for that amount (it includes the lettuce):
Cals: 307
Carbs: 4
Protein: 31
Sodium: 365
Try it and let me know if you liked it.
