Up to my neck in cucumbers (recipes needed)

I had no idea (really, NO idea) one small plant could produce so many cucumbers. And all at once. Wow, what a bounty.
So far I have made:
Pickled cukes (vinegar, onions, sugar)
Filtered water with cukes and mint (mm, this is good--I'm on my sixth glass of water this morning)
Today I am going to make:
Peach Chicken Salad (lots of cucumbers in this recipe)
Cucumber egg salad
*I can share any of these recipes if anyone wants them.
Does anyone have any other good recipes for cucumbers?

I like to make:
cucumber sandwhiches (I use sprouted bread-but any bread you have is good, and laughing cow cheese wedge)
Cucumber/cherry tomatos sprinkled with feta cheese make a yummy and crisp salad
tzatziki sauce (allrecipes.com has great recipes for this)
you can also make a cucumber sour cream dill salad served cold (I like to replace the sour cream with plain greek yogurt. Directions: peel and thinly slice the cucumbers, sprinkle gently with salt to taste and place in collander to drain. mix in a small bowl plain greek yogurt OR sour cream with fresh dill, minced garlic and onions and white pepper. once cucumers are drained add to the greek yogurt mixture and mix well. refridgerate for a few hours before eating it cold)

I too am up to my eyeballs in cukes I made a cucmber salad:
3 cucumbers
1 pt grape tomatoes
1/4 chopped red onion
2 mozzrella cheese balls(fresh)
1/2 bottle fat free italian dressing (less could be used and still flavorful)
It worked out to 63 cals per cup or there abouts.0 -
Tuna Cucumber Boats
-Tuna (flavored is better)
-Cucumber
-Celery
-Carrot
-Sunflower Seeds
Finely dice the carrots and celery. Mix with the tuna. Slice the cucumber lengthwise and scoop out the seeds. Slice off a bit off the back so that it sits stable. Fill in the area where the seeds used to be with tuna. Sprinkle with seeds. (And cheese if desired.)
Quick Cucumber Salad
-Grape Tomatoes
-Cucumber
-Celery
-Carrots
-Italian Dressing
Dice the veggies, toss together with tomatoes and dressing. Serve cold.
Watermelon Cucumber Soup
-1 Medium Cucumber
-4 cups Watermelon, seedless, diced
-1 pkt Stevia in the Raw (or a pinch of sugar)
-1 tsp Lime Juice
-1/4 cup Half & Half Cream
Peel and deseed the cucumber. Chop the cucumber and place inside a food processor or blender. Add the watermelon, stevia, lime and cream. Blend until smooth. Refrigerate until ready to serve.0 -
Sliced cucumbers
Thinly sliced red onion, soaked in apple cider vinegar
Light sour cream
Mix it up, enjoy! I love this recipe and eat it all the time.

Cucumber chunks
Dill

Feta ‘N Fuji Chicken Salad (Hungry Girl)
4 cups chopped romaine lettuce
3 ounces cooked and chopped skinless lean chicken breast
1/2 Fuji apple, cored and chopped
1/4 cup chopped seedless or seeded cucumber
1/4 cup sliced beets, drained
3 tablespoons crumbled reduced-fat feta cheese
Dressing:
1 tablespoon honey mustard
1 tablespoon fat-free mayonnaise
1 teaspoon cider vinegar
Black pepper to taste
Also - try adding chopped cucumber to regular fruit salad (strawberries, melons, grapes, etc). Adds volume - with very little calories.0 -
Slices on whole grain bread and cream cheese or ricotta
Dipped in hummus or other dressing
Added into smoothies
Veggie Sandwich (whole grain bread, cukes, spinach, tomato, hummus, olive oil, oregano, turkey if you like)
Puree with fruit to make healthy ice pops

One of my favorite salads is thinly sliced cukes, tossed with s/p, dill, a bit of minced garlic and some sour cream.
Also - Tzatziki (A Greek sauce/dip similar to the above recipe, but with yogurt and lemon instead of sour cream.) Don't have a recipe handy, but you can Google loads of them.
Sunomono salad (you know - the Japanese cucumber salad?)
I just snack on them plain mostly... they're good with hummus also.
OH - or with tomato wedges, olive oil, balsamic, feta and oregano. YUM!0 -

Here's the cucumber egg salad recipe. I added chopped yellow onion, garlic salt, and black pepper. Also I doubled the eggs this recipe calls for. And, in hindsight, I should have seeded the cucumbers.

This one is chilling in the fridge right now. I used nectarines, more cucumber than called for (trying to use the dog gone things up!), and I added 2.5 C whole wheat rotini to make it more hearty. I doubled the dressing. I tried to cut back on the sugar, but it was way too acidic tasting when I did, so I added the called for amount of sugar after all.

This is not a 'recipe'...but one of my FAVORITE ways to eat cucumbers...is to slice into half inch slices (the short way)...leaving the skin on (if its not bitter) and topping with Laughing Cow light cheese.....:) Sometimes I dip 'em, sometimes I get out a knife and actually 'spread' the cheese on the cuke....either way..simple and delish.0

cucumber base (instead of lettuce)
green pepper
onion
kalamata olives
feta cheese
cherry tomatos
dressing: olive oil and lemon juice
I always just put the veggies in to taste... no measurements.0 -

Slice cucumbers, add lime juice, cayenne pepper and salt.... and eat!!!!!!!

1 Mango-finely chopped
2 Cucumbers-seeded and chopped

Used to do a cucumber salad (kind of), slice the cucumbers thin, and then put a few drops of lemon juice, salt, and pepper, and sour cream mix and chill...turns out really good. Not sure of any of the "counts" but it's another alternative.
Also had a coworker do a pasta, shrimp, cucumber salad the other day. She used elbow macaroni (i'd go for the shells they make me happy), baby salad shrimp, cucumbers chopped up, and mayonnaise (again not sure of the count) but it was really good and I don't like cucumbers0 -
This is a summertime fav in my family. It's really good with sliced tomatoes added into it as well. A perfect sidedish on a hot summer evening and a great summer potluck dish as well!
Lizzeth's Cucumber Salad
from The Biggest Loser Cookbook
4 cups sliced thin cucmber unpeeled
1/2 medium red onion finely slivered
3 cups water
11/2 cups white vinegar
3 packets splenda
1/2 tsp salt
1/2 tsp ground black pepper
supposed to make 6 11/4 cup servings, if you use 3 medium cucumbers instead, it will. mix all ingredients together in plastic container cover and refridgerate for at least 3 hours, lasts up to 5 days. Nutritional values as in the biggest loser cookbook would then be as follows, 40 cals, 2g protien, 6g carbs, 0g fat, 0mg cholesterol, 2g fiber, 195mg sodium.
