Cooking Vegetables

What is your favorite way to cook veggies? Steam? Roast? Any tips on spicing them up?

I've been buying the veggies that I can steam in the microwave, and I know I can do better than this!!

I know I can always count on MFPeeps for great advice.

    My rice cooker (which I cook all my grains in, not just rice) has a veggie steamer on top, so that is always the easiest way for me to do it, but if I have more time, I definitely roast them. I also have a smoker, and throwing some veggies in that for about an hour gives them an incredible flavor!

    I love the Ziploc Zip’n Steam Microwave Cooking Bags for making easy veggies in the microwave. My favorite is corn on the cob (3 mins per ear), comes out perfectly! I also rinse and reuse them several times before tossing.

    I steam them *barely*... overcooked vegetables are the work of the devil!

    Often I'll take them out of the steamer and stirfry them for a minute with onions, garlic and spices. Smoked paprika is my current obsession as far as spices go - and goes well with cumin. Red pepper flakes makes everything more delicious :bigsmile:

    I saute 2 cups of raw veggies without any oil or butter.

    I throw in 1/2 cup of cous cous and
    1 cup of water, and you get something pretty amazing :)

    I usually steam my vegetables on the stove. Usually it's just broccoli because that's my favorite vegetable! But I've been reading and I guess you lose a lot of nutrients from even steaming the vegetables, that it's better to eat them in their raw form. That isn't a problem for me since I love raw broccoli and am not a fan of soft vegetables to begin with! Other than steaming, I don't really cook my vegetables or add anything to them in any way. Works for me though!

    Steamed* veggies are by far my favorite, but I also like to pan "fry" them in a little wine and spices or drizzle with olive oil and spices and grill 'em.

    *When I say steamed, I mean heated with steam until they're just warm and still crunchy.
  • I LOVE LOVE LOVE my roasted on the grill
    toss THICK cut fresh veggies with a little olive oil, season how you like & pop them on the BBQ
    asparagus, corn on the cob (cut it in 2ich slices) onions (vidalias especially) asparagus, peppers, zucchini & squash (cut longwise)
    potatoes & sweet potatoes are great this way too

    One of the easiest, and best ways to cook veggies is steaming them in the microwave. Wet a doubled up paper towel and place it on a plate. Lay bite size pieces of whatever veggie you'd like to steam on the plate. Add seasonings, I like garlic salt and black pepper, simple but good. Then place another wet doubled up paper towel on top of the veggies. My microwave has a fresh veggie setting so I just use that, but I think it's about 3-4 minutes, not too long. Experiment with your microwave because everyone's is different and the size of the pieces of veggie can change the cooking time too. Enjoy!

    If I'm not steaming as a simple side, I'll stir fry them with a little oil and low sodium sauce of some sort, saute them with a little butter and seasonings in a pan, roast them in the oven by coating them with olive oil and herbs, and a new way I've come to like them is by heating some oil and fresh crushed garlic in a pan until the garlic is golden. Then I take the garlic out, and add w/e veggies I want, season with black pepper or red pepper flakes and other seasonings I've used in the rest of the meal. You can also make a really simple tomato sauce like this too. Make the garlic oil then put some cherry tomatoes in there with a small amount of chicken stock. Pop a lid on it, put it in between medium and high heat and wait for the tomatoes to burst. Season with whatever herbs and spices you like in a pasta sauce. I like to add grilled corn just sliced off the cob to it to make it it's own side dish or put cooked pasta straight into it so the pasta kind of soaks up the sauce. Delish!
