TOMATO and JALEPENO recipes?

My garden is exploding with tomatoes and peppers. Other than the standards (canning, spaghetti sauce, salsa), what are your favorite tomato and pepper (jalepeno) recipes?

You can smoke, dehydrate, oven cure or sun-dry both items.
This will give you chipotles and sun-dried tomatoes, both of which store easily and can be added to a lot of healthy recipes.
How you do it really depends on the climate where you live (some areas are just not good for sun drying) or the equipment you have access to!
You can also make a chow-chow (piccalilli) or other sweet-hot relish. MUCH different than salsa and the vinegar means that is keeps longer.
That combination would also make the base for a big batch or chili or a really good soup.
Oven roast the tomatoes, seed and roast the jalapenos, add some garlic & stock and puree with an immersion (or regular) blender. Top with Greek yogurt or sour cream and some cilantro and you have a kick *kitten* spicy tomato soup!

mmmmmmmm.... my mouth is watering! I'll definitely try that soup idea. My hubby LOVES spicy, so that will be awesome for him too!0 -
You could also stuff some of the tomatoes with whatever you like i.e. tuna, couscous, rice, etc. and then bake.0
