Microwave Omelette
Was looking for breakfast ideas to do whilst at work and came across this:

It looks simple enough! And looks good. I may have to try it, just have to make sure the egg is cooked all the way, I'm kind of funny about my eggs that way *lol*0

Yeah, so am I.
I rang my daughter at home and got her to try one. 45 seconds wasn't enough, so she did 1 minutes, added the extra's then did another minute. She said it turned out perfect and was delicious!
She put capsicum, mushrooms, shallots, ham and cheese on hers. Yummo!!!0 -
I do scrambled eggs in the microwave as cleaning a microwave bowl is easier than cleaning the saucepan...the only thing i'd say here is test...a few seconds at a time...try 45 seconds then add 10 seconds if its not quite done and so on because there is nothing worse than overdone microwaved egg...it gets eggier (I know its not a real word but heyho) and rubbery0

I'm doing it tonight with a side salad for dinner. I'll fine tune it then.
Am thinking :
2 eggs
Mushrooms
Capsicum
Shallots
Tomato
Crumbled Feta
Should be around 240 calories. Not bad!0 -
They make omelet pans for the microwave. I bought mine at K Mart. I have a "Misto" filled with olive oil and use a spray of that. I have done Mexican omelets with fresh salsa, scrambled eggs (or egg beaters) and sharp cheddar. Comes out amazing!0

Lol....I have been eating these for lunch for weeks at work, the trick is to get a good microwave container that has a steam valve lid and that is nice and deep - makes the perfect omelettes. I have been experimenting with different ingredients...today I had eggs, baby spinach, cherry tomatoes, red capsicum, chicken breast, laughing cow light cheese triangle (sliced), cayenne pepper and mixed herbs. Yummy!0

Excellent. Will take out the feta and add that cheese instead. Brings it down to only 220 calories! Even better!
