Chicken Enchiladas #locarb

6 Mission Carb Balance Tortillas- the small fajita size
1 roasted chicken from the grocery store "hot food" dept.
1 bottle of herdez salsa verde (or any tomatillo salsa)
1 cup chicken broth
1 jar of tostitos monterrey jack queso
1/2 cup cheddar cheese for "garnish"

Preheat oven to 350.
Get your gloves on and shred that little chicken into tiny pieces with your bare hands and discard the bones.
Mix chicken with salsa verde and broth, spoon into tortillas and place seam side down in casserole dish.
Pour Queso over tortillas, garnish with cheddar cheese.
Bake for 20 minutes.

** if you want to use less tortillas to save carbs, don't stuff the chicken with them, just add a layer of them between layers of the chicken mixture like lasagne noodles
