Pakistani/Indian Wok Style Chicken

Ingredients
2 kg cube size boneless chicken
1/2 cup olive oil or canola oil
1 tablespoon crushed ginger
1 tablespoon crushed garlic
salt (to taste)
red peppers
green chilies
6-8 tomatoes
fresh coriander
Directions
1Heat oil.
2Add chicken.
3Fry on low hear till the water in the chicken dries.
4After the water dries fry the chicken in the oil till it turns light brown.
5Add salt, red pepper, ginger and garlic.
6Cut tomatoes and add in the chicken.
7Cover the wok/pot and cook at low heat.
8Let the tomatoes cook and when you see the oil on the chicken, sprinkle fresh coriander.
9Chicken Karahi is prepared.
10Serve Hot!
I make this chicken all the time and it tastes real good with brown or white basmati rice. It's easy to make and cooks fast!
