I was logging my baked tilapia and saw this in the list: "Homemade Pesto Crusted Tilapia" :tongue:

I tried to "Google" a recipe and came up empty handed. :sad:

If this is your creation, I'd love to have the recipe. I eat A LOT of fish and am always looking for new ideas.

    Sorry not my recipe, but here is how I cooked some salmon a couple weeks ago and it was so good.

    Combine, 1 can black beans, 1 can white corn, 1/2 jar salsa (I use pace not the small jar, but the next size up, medium hot). extra of this can be used as chip dip.

    On a peice of foil place about 1/4 cup of the black bean salsa and spread out to size of salmon fillet. Place salmon fillet on the mixture. place another 1/4 cup on top of the salmon and spread around to cover top of fillet. Fold foil up and roll edges to make a packet. Grill (sorry don't know how long, hubby does the grilling) till salmon is done. we served on rice.

    Here's a chicken recipe I'm guessing you could sub the fish

    1 7-ounce package purchased refrigerated pesto
    1/2 cup chopped walnuts
    4 tablespoons fresh lemon juice
    1 teaspoon grated lemon peel
    4 skinless chicken breast halves with bones
    1 tablespoon olive oil


    Lemon wedges

    PreparationPreheat oven to 425°F. Blend pesto, chopped walnuts, 2 tablespoons lemon juice, and grated lemon peel in processor just until combined. Place chicken on large rimmed baking sheet. Coat all of chicken with pesto mixture. Drizzle with oil. Bake chicken until cooked through, about 30 minutes. Transfer chicken to platter. Tent with foil.

    Strain pan juices into small bowl, pressing on solids in strainer to extract as much liquid as possible. Whisk in remaining 2 tablespoons lemon juice. Season sauce to taste with salt and pepper. Spoon sauce over chicken. Garnish with lemon wedges and serve.

    It's so yummy. Maybe we'll have that this weekend. It's very easy to make.

    but, we just tried a Cooking Light recipe for Lime-Marinate Salmon last weekend it was great!

    I would recommend giving it a shot, too!

    Should come up if you google it.

    *Pesto-Crusted Baked Fish*

    Prep time: 7 minutes

    Total time: 22 minutes

    Servings: 2

    1 teaspoon butter

    3 tablespoons prepared pesto

    1/2 cup dry plain bread crumbs

    2 fillets (6 ounces each) orange roughy, cod or other mild white fish

    1 tablespoon mayonnaise

    Heat oven to 400 degrees. Place butter in an 8-inch-by-8-inch baking pan and place in oven until butter melts. Remove pan from oven and swirl butter to coat bottom of pan. Combine pesto and bread crumbs in a shallow bowl. Spread both sides of fish with mayonnaise. Dip both sides of fish in pesto bread crumbs to coat, then place in prepared pan. Bake 15 minutes, or until fish flakes easily with fork.
