Cream of mushroom soup.. yum yum yum :D

2 white onions
2 garlic cloves
350g chestnut mushrooms
pinch of saffron
1 tbsp of light soy sauce
1 tbsp of plain flour
600ml of vegetable stock
300ml of semi skimmed milk
2 tbsp 2% fat greek yogurt

- Heat a large sauce pan and dry fry the onions and garlic until soft.
- Add the sliced mushrooms, saffron, soy sauce and thyme and continue.
- To cook lightly, sprinkly the flower over the vegetables and cook out for 1min. Stirring continually before gradually stirring in the stock and milk.
- Simmer gently for 20mins.
- Just before serving remove the pan from the heat and stir in the yogurt.
- Serve with a 50g granary baguette per person if wanted.
