Recipe Needed: Pumpkin Muffins/Bread - No Eggs

OK, it's Sunday, I'm in the house & I don't want to eat anything that's 'bad' for me. I have two cans of pumpkin & was thinking of making some pumpkin bread (or muffins - same thing) w/splenda. Don't have any eggs (I bought like 8 doz at the beginning of the month since I got such a good deal, and I refuse pay the ridiculous convenient store prices).
I did a bunch of searches - I came up with vegan pumpkin bread/muffins, but the recipes have like a cup of oil :huh: and I don't have any applesauce here to sub.
Anyone have any ideas?

you can substitute any kind of fruit puree for the oil0

Well, I have two solutions: someone sent me a link - silken tofu (got some in the fridge), blended as a substitute, and I also have some frozen fruit i could blend in the food processor! I used to bake lots of vegan stuff yrs ago, but I've forgotten lots of what I did.

(and ayshamc - never occurred to me that canned pumpkin wouldn't be available overseas! It's a holiday necessity for baked goods here, lol)0 -

The easiest way to sub for eggs is to use egg replacer: http://www.amazon.com/Ener-G-Egg-Replacer-16-454/dp/B000QSS2C4
As for replacing oil, you can definitely use applesauce in equal amounts. It makes the baked product slightly spongy, as opposed to moist and cake-like, but you will not have the fat calories from oil!!

1 can of spice cake and 1 can of pumpkin. Mix together and you can make either as a cake or cupcakes. No eggs or anything else.0

OK, it's baking in my toaster oven (hooray for thrift shops & my smaller loaf pans find!) so as not to heat up the kitchen.
Decided to use this recipe:

Was a bit annoyed by the "1/2 C egg substitute" instructions (can mean a lot of things depending on what egg substitute you use), but I threw in 1/2 cup of my silken tofu anyway. Had some frozen peaches (been there forever and a day, lol). Whipped that up in the food processor til smooth & added it.
For the sugar substitute - the recipe calls for 2 C of sugar!! Eeks - I normally cut sugar down a lot in recipes even before I changed my eating habits. Got tired of opening those little Splenda packs. Seemed to be about 1/4 C of Splenda, then I added about a tablespoon of strawberry jam (hey, it's what I have...) to offset the bitter taste that could result.
Used close to a cup of walnuts - no raisins in the house. Batter seemed heavy to me (I used to bake a lot) so I added a scoop (maybe a 1/3 C) of yogurt (fat free).
Oh, and I forgot the salt.
I'll let you guys know how it turned out when they're done!
Thanks for the added ideas - jello_mamma, I'm not vegan - just trying to make due w/what I have (or rather, what I *don't* have) in the house right now. Good for other people though!
I used to buy Egg Replacer when I baked for my girls way back, but found other (cheaper & handier) subs (like these, which I entirely forgot about!) But I use eggs.0 -
Here is a family favorite. Chocolate Pumpkin Muffins:
1 can pumpkin (standard size)
1 box of chocolate cake mix (I have also used Spice cake mix and Carrot cake mix)
About 1/2 cup of water
Can add about 1/2 cup of mini chocolate chips or leave out
Heat oven to 350. Mix together all ingredients, divide into muffin tin cups, bake for 25 - 30 minutes. Makes about 1 dozen.
You do not add any eggs or oil to the cake mix, just use it dry out of the box. When I have used the spice and/or carrot mix, I have added raisins and pineapple pieces. My kids love it.

Came out delish! Crust was a bit gummy (due to the lack of fat - but I expected that). Just sweet enough for me.
