Please help me consume my calories!!!

I am on a 1250 calorie per day regimin. For over a week now, I've been stuck late at night with hundreds of calories to consume. It can be anywhere from 450-850 left after 9pm. I'm not starving myself. I'm full all day. So after a day of eating and being full, what do you all suggest that is small and calorie loaded for me to eat? Yesterday I ate a much bigger breakfast and STILL had 430 calories to eat. What I had been doing was not eating them, but then I found that I wasn't losing any weight. I actually gained a pound. I'm looking for sweet and savory small, high calorie items that will help me reach my calorie goal but not stuff me like a pig. This also brought me to the realization that I didn't gain the weight necessarily because of overeating. I think I eat as much and as often as I used to. It's just that 6 ounces of cake or fried potatoes has way more calories than 6 ounces of tuna salad. Thanks MFP's.

Nuts, avacados, or a couple of slices of rye or whole wheat bread doused with olive oil. The good fats help your blood lipids, overall satisfaction, and help you lose fat.0

Almonds are great or any kind of nuts you like. Full of calories but good for you.0

I used to undereat too until I found this website. At first I found the 1200 calories I have to consume a lot, I really felt I was eating a lot. I've been exercising a lot and my metabolism seems to have increased, now 1200 calories feels like a "diet" and I might eat a bit more soon.
A bowl of cereal and milk with a good dollop of yoghurt should fill out your calorie intake. If you really don't like eating you could also try protein shakes, they are fairly high calorie esp if you make with milk and a banana blended in.
How about a couple of slices of toast with a poached egg or two.
To be honest I find it hard to believe you are not starving yourself if you are only eating 600 calories or so in a day , that really isn't much!0 -
What I do is break my meals up into 300-300-300-300. Then I make sure that I eat around 300 calories for each meal, and that leave me 300 for snacks. I often log ahead of time, too. Higher calorie foods- beans, meats, nuts, avocados, greek yogurt (its not super high in calories, but generally higher than fat-free yogurt). Without seeing your diary I can't really see what you like to eat, so I hope those suggestions help.0

I had the same problem in the beginning because I was scared to go over and had way too many left at the end of the day. Plan the night before and go ahead and log your estimated exercise so you make sure to fuel up throughout the day. You certainly do not want to not eat enough; that is just as bad as eating too much.0 -
My favorite as a snack is 2 tablespoons peanut butter with either an apple or banana. Roughly 300 calories total.0

I love the suggestions. Keep 'em coming. I do eat a lot of toast and simply fruit jam. I will start to switch that up to olive oil sometimes. Also, I like the fruit, nuts and peanut butter suggestions. I don't eat pb, I eat Nutella though. I have also thought about adding a full-calorie drink to my day. My drinks are usually powder packets that are 10-20 calories per bottle. Pre-filing my food journal is an awesome idea! Thanks everyone!0

sweet, healthy and high calorie - cocoa roasted almonds. If you are truly eating that much throughout the day and not meeting calories I would ask if you are eating enough fat. Unsaturated fats are very important but also very high calorie.0

I think a lot of us just starting MFP have trouble eating all of our calories at first. I know I did and still do sometimes .It will help if you plan your meals and snacks ahead of time either first thing in the morning or the night before if you know what you will be having. That is what I do and it does seem to help me reach my calorie intake. Good Luck.0

nuts!! also maybe try a (whey) protein shake after a work out... I mix mine w/ Almond milk.0
