What am I Doing?!

So I've got quite a few health questions, and it'd be great if somone could shed some light

Protein: what's it do. I hear everyone say they drink protein shakes but why?
Carbs: I get that there are good acrbs and bad, and I know not to eat carbs such as rice after a certain time ( i try not to after lunch)

Exercise: Do i eat the calories I burned to stay within my target calories for the day?

What are net calories etc?

I'm very new to this program, and have been using weight watchers for the past few months. I just wanted to try this as well. Im also slowly working towards becoming vegetarian so any tips with that and making sure I get enough vitamins and what not without supplementing would be great.
