Cucumber Mint Pops

Cucumber & Mint Pops
Makes 8 mini pops
Think chilled cucumber soup but frozen in an ice pop. This simple savory creation is a refreshing way to eat on a scorching hot day. Serve as a first course or intermezzo to friends to stimulate the taste buds.
2 cups diced cucumbers, peeled and seeded
¼ cup non-fat Greek yogurt
20 mint leaves
½ teaspoon salt
Blend all ingredients together in a blender. Pour mixture into molds ¾ of the way. Freeze until beginning to harden and place sticks. Let freeze for several hours, run warm water over the mold and remove ice pop.

Yum! What a great idea I always have sugar free fudgesicles in the fridge but this seems more refreshing and more natural
