Cabbage Stir Fry Lunch Box (375 calories w/pic)

I called today's lunch box a stir fry because that's essentially how you cook it and it has mostly the same ingredients. It's delicious and filling! And you don't even notice there's no meat. You can reheat it or eat it room-temp. I liked it either way but my hubby liked it better warm.

4 cups Cabbage (about half a medium head)
1 Zucchini, small
1/4 Red Bell Pepper
1/4 Yellow Bell Pepper
1/4 cup Whole Wheat Flour
1/4 cup Egg Substitute
2 Tbl Butter, unsalted
1 1/2 cup of Mushrooms
1 tsp Soy Sauce
3/4 cup Rice, cooked
1 wedge Laughing Cow Cheese, Herb & Garlic
1 Cucumber, medium
6 Baby Carrots
1 Kiwi
1 Tbl Light Italian Dressing

Thinly slice and shred the cabbage. Thinly slice and dice the zucchini. Dice the bell pepper and mushrooms. In a large bowl mix together the egg and flour. Add the cabbage, zucchini, bell pepper and mushrooms and toss to coat. Melt butter in a large pan over medium heat. Add cabbage mixture to the pan. Cook, stirring often, until cabbage starts to become transparent. About 10 minutes. Let cool before dividing and adding to the boxes.

Press the rice into a rice mold and stuff with bits of laughing cow cheese to make onigiri. Use Nori/Seaweed paper to make faces if desired. Divide and add to the boxes.

Slice the cucumber. Peel and dice the kiwi. Divide and place the remaining ingredients into the boxes, keeping the dressing in a separate container. If you intend to reheat before eating (recommended for yummyness!) remember to eat first/remove the dressing, fruit and the raw vegetables.
