My yummy pasta recipe!!

So we had a hodge-podge of leftovers in the fridge and I experimented a little...And it turned out SO YUMMY! I was super full when I was done!
1/2 TBSP butter
1 TBSP olive oil
2 tsp minced garlic (I used the pre-minced in a jar, you can sub of course with fresh)
8 oz boneless skinless chicken breast, chopped
5 ounces of heavy whipping cream
8 ounces of portabella mushrooms, chopped
1/2 tsp garlic salt
1/2 tsp dried basil (again, you can use fresh if you have it)
1/2 tsp salt (for the penne's boiling water)
2 cups baby spinach
1/4 cup white wine
1/2 tsp fresh ground black pepper
1/4 cup grated Parmesan cheese
11 oz package penne noodles
First I heated up the olive oil, butter, and garlic until it browned a little. Then I added the chopped up chicken, basil and garlic salt. After about 3 minutes, the chicken is mostly cooked through and I add in the mushrooms. Let this cook for about 5 minutes, stirring so it doesn't burn. Start preparing the penne noodles at this time. Add in the spinach (to the chicken mixture) and let this wilt down a little before adding the whipping cream and white wine. Let this simmer for about 8 minutes. Add the black pepper. Drain the noodles and pour the chicken mixture into the noodles. Add in Parmesan and stir until melted through.
Makes 5 servings

Not TOO bad...it's got kind of a lot of fat and carbs...but it was SUPER filling and I won't need to eat for a while0 -

Yeah thats what I was thinking. Its no 350 calorie lean cuisine that youll eat and be hungry 3 minutes later.0
