Asian-Inspired Salad with Salmon

Asian-Inspired Salad with Salmon
Serves 4
Prep Time: 20 minutes
Ingredients
• 4 (4 to 5 oz.) skinless salmon fillets
• 1/3 cup bottled sweet and sour sauce (many sugar free sauces available to choose from)
• 1 pkg. All Natural Asian Island Crunch Kit found on your fresh produce isle
• 3/4 cup Raspberries
• 1/3 cup dried cranberries
• 1/4 cup chopped fresh mint
Instructions
• Brush salmon with sweet and sour sauce.
• Broil or grill salmon 8 to 10 minutes turning once or until desired doneness.
• Combine all ingredients in salad kit except Sesame Ginger Dressing in large bowl.
• Add raspberries, cranberries and mint. Toss with dressing.
• Divide salad mixture on 4 large plates.
• Arrange cooked salmon on each.
Never have tried this - but sounds YUMMY - so it will be on the menu soon!
