No-Bake Mexican Casserole

Okay, it's not *really* no-bake if you have to bake the chicken hehe :tongue: But I have a Foreman grill, and I mic everything else. You can play around with amounts, but I use:

Brown Rice
Fat Free Refried Beans
Chicken Breast
FF Cheese Single or 1 oz. of 2% Cheddar (whichever fits your needs)

1. Cook chicken. I use salt, pepper, garlic, cumin, and chili powder to season mine.
2. Cook Rice. I use the 10 min. brown rice.
3. Spread beans into the bottom of your bowl.
4. Spread rice on top of beans
5. Shred/cut chicken and place that on the top.
6. Shred/cut up cheese and sprinkle on top of chicken.
7. Microwave for 1 min. All done!

I use 4 oz. each of chicken, beans, and rice, and 1 oz of cheese. It works out to:

2-8 g of fat (depending on the cheese)
30 g carbs
8 g fiber
38-42 g protein
