Microwave cauliflower according to instructions on the bag. Combine cooled, cooked cauliflower with rest of the ingredients in a food processor. Heat a skillet (that can also go in the oven). Preheat oven to 350.

Coat skillet with EVOO and then dump the mixture into the preheated skillet and spread evenly. Cook till bottom sets (about 5 minutes). Place skillet in the oven...cook till top is crisp (about 20 minutes). Use a plate and spatula to flip the crust over and then slide it back into the skillet. Cook till flipped side is crisp.

Cover top with sauce, toppings and cheese (need to calculate calories for all this). I use 1/2 cup spaghetti sauce and 1 cup of mozzarella cheese for the entire pizza...and put back in the oven till cheese is bubbly.
