~Raw Food Kick for Summer (and beyond)

I am on a major ~Raw Food Kick~ right now and decided I will challenge myself to try at least one different item each week that;
A) I have never tried, or
I have tried only cooked, (or in some cases roasted, like nuts for example)
I will enter the item into this topic post along with any prep ideas I can come up with.
Eating raw is a unique way to bring up your energy levels and metabolism! I love it
Would any of you like to join in?
What foods do you eat raw now that you used to only eat cooked?
Does anyone have any good recipes to share that include only raw foods?

I love eating raw foods but haven't been eating raw as much as I like because I've been so busy. I'll join in just to give myself a reason to prepare more raw foods. I have TONS of raw food recipes. I love raw zucchini noodles and marinara, raw nori and veggie wraps, raw pudding, and lots more.0

My favorite raw food is banana ice cream!

I've been feeling the same way! Decided to start my kick off by doing a purely raw food fruit/veggie week.
I eat fruit for breakfast - mangoes, oranges, apples, peaches, etc.
Lunch is juiced vegetables - trying new and interesting things and combinations... dandelion greens, baby bok choy, mint, fennel, beets, etc.
dinner is an all vegetable/fruit spinach salad. My favorite salad right now is a mango salsa type salad - so it's fresh spinach topped with sliced avocado, onion, tomato, bell-pepper and mango.0 -

Oh, recipes! These are some of my favorites (mostly from Raw Foods Made Easy for 1 or 2 People by Jennifer Cornbleet)
Super Easy Key Lime Mousse
1 avocado
2 Tbsp raw honey or agave nectar
1 Tbsp fresh key lime juice
This is half the original recipe. I put everything in a personal blender and blend until smooth.
Spiced Peaches w/ Crumb Topping
Peel and slice some fresh peaches and sprinkle with cinnamon and nutmeg
In small food processor chop:
1 cup raw pecans
1/4 cup unsweetened shredded dried coconut
1/4 cup raisins
4 dates
a few dashes of cinnamon, nutmeg and salt
raw palm sugar to taste (optional)
Sprinkle over peaches.
Creamy Tomato Soup
3 ripe tomatoes, seeded & chopped
1/4 cup water
1 clove garlic, crushed
1/4 tsp onion powder
1/4 tsp salt
1/2 an avocado
1 Tbsp olive oil
2 tsp fresh dill or basil
Use a blender to process until smooth.
Zucchini Hummus
1 zucchini, peeled and chopped (about 1 1/2 cups)
2 Tbsp raw tahini
2 Tbsp fresh lemon juice
1 clove garlic, crushed
1/4 tsp cumin
1/4 tsp paprika
1/4 tsp salt
Process until smooth.
Raw Marinara
1 ripe tomato, seeded and chopped
1/2 cup sun dried tomatoes (either oil packed or soaked to soften)
1 Tbps olive oil
1 Tbsp fresh basil
1 tsp dried oregano
1 clove garlic, crushed
1/4 tsp salt
dash pepper
dash cayenne
Process in food processor until smooth. Serve over spiralized zucchini noodles.0 -
raw zucchini noodles sound scrumptious! I was just looking at the zukes, back I go to TJ's to get them, only place I know in town that offers organic ones..thanks!

I would really love to eat more raw foods. One thing I eat raw that I used to eat cooked is oatmeal. Before a long run or race I eat raw oatmeal with slivered almonds, chia seeds, raisins, and soy milk. Not sure the soy milk is raw though. :bigsmile:0

wow, those recipes look great! Makes me wish I had a food processor.
I'm gonna be trying the spiced peach one, just as soon as I add back nuts, beans, etc. (For this first week it's ONLY fruits and vegetables for me)0 -

I found the recipe for the milk, still researching the cereal tonight so,
will post my ingredients here when I get them together

I think I may have stumbled onto the recipe for raw banana ice cream because I found banana "milk",
in a blender put bananas, filtered water and almond extract to taste, pour into ice cube trays and freeze.

YUM! I think I might try the tomato soup, but with a little more H2O and make it a virgin bloody mary MMMMMMMMM0

I made a pasta salad with lots of raw veggies & cilantro today!
used my food processer to make shredded zucchinis and added a fresh
red sweet pepper from the garden divine!0
