Smoked salmon

I'm having a little dinner thing tonight and I want to do smoked salmon as an appetizer. The thing is I'm trying to do low carb after lunch. Any suggestions of what to serve with smoked salmon, other than crackers or bread?

    You can cut cucumber into an inch or 1/5 inch long pieces..then scoop out part of the inside to make little cups. Then you can chop your smoked salmon and put some kind of soft light cheese mixed in (you can mix part light cream cheese and part greek yogurt), add dill, lemon juice and stuff in your little cucumber cups. Very delish!

    Great suggestion! You could also use Laughing Cow Light instead of cream cheese.

    There are low carb cracker options (such as Wasa Fiber Rye Crackers, Atkins crunchers), but also salmon spread is great on celery sticks. Also sliced red peppers (slice a little wider than sticks).
