Eggplant fries

I went to a healthy cooking class last night and the teacher was demonstrating an oven fried eggplant french fry. I thought to myself "EWWWW"-until I tasted it.OMG it was soo goood! So here is the recipe. I haven't figured out the calories but I'm sure its not much. Enjoy :flowerforyou:

1 eggplant, peeled and cut into thin pieces
1 egg
1 cup milk
Italian seasoned bread crumbs
Olive oil

Beat egg and add milk, soak cut eggplant in egg was fr 2-3 minutes.
Roll eggplant in seasoned bread crumbs.
Pour 2 TBS. oil onto baking sheet, enough to cover the bottom of the pan thinly.
Arrange eggplant on baking sheet.
Bake at 350 for 30 minutes, turning every 10 minutes until browned. You may need to drizzle a little more oil over the fries half way through.

    ooooh thanks!!! I'm constantly looking for ways to "like" eggplant. So far I only like it freshly grilled or disguised in a curry.
