    OMG! I tried this tonight and it was amazing. I am single so I had to modify the recipe to just 2 servings which gives me lunch tomorrow as well. I increased the shrimp to 2oz per serving and had to add a little water to the mushrooms since there was less oil, but I have to say this is now a favorite of mine. I would serve this to guests! Thanks so much for sharing Emily.

    Made this last night and it was awesome!!!! The only thing that I did different was that I added some fresh chopped tomatos, only because they just started to rippen in my garden and I couldnt wait to use them!!
    But just wanted to say that it was an amazing dinner and my hubby had not clue that it was low-cal!!!

    Um. Um. You had me until the spinach. lol. What does the spinach add to the flavor or texture? Sans the spinach, it has many of my favorite things and sounds incredible!

    Just dont put the spinach in! My fiance and I just love the taste of spinach haha- if you don't put in the 2c spinach, minus 14 calories for the recipe

    so i made this recipe last night. it was OK, but a little bit bland i thought. tried adding a few red pepper flakes to my portion of it, and that wasn't the answer.

    i think i will make it again, but next time i am going to use some grilled rosemary chicken instead of the shrimp. i am also not going to slice the mushrooms so fine.
