I took your advice and bought some fresh sweet potatoes at the supermarket yesterday. This morning I "baked" two of them both equal to about a pound in the microwave. Cut them in half and put 3 in the fridge for later "fast food" meals. Enjoying the first one right now for lunch before I head off to work. It is awesome!0

Just wanted to post this, found it today looking up nutrition facts. Sweet potatoes aren't really that calorie dense, and even better, may help regulate blood sugar levels (esp in people with type 2 diabetes). Here's the site I was reading:

Just thought some of you might be interested, since there are so many other benefits and I know a few posters were worried about it all going to fat. Looks like that's not the case!0
