Microwave Huevos Rancheros
I wouldn't normally post such a simple recipe but I tried making this for lunch and was wowed at how great it turned out for being made all in the microwave! Our stove/oven is broken so the microwave is all I have to work with right now, surprisingly it does a pretty good job!
Ingredients:

Numbers are: Calories | Carbs | Fat | Protein | Sodium | Calcium (Yeah the sodium isn't the best <.<)
Take a small cereal bowl and spray with 0cal cooking spray, then crack an egg into it and puncture the yolk. Add salt and pepper.
Cover with a paper towel and microwave the egg until it makes a popping noise. If it looks even a little runny still,microwave it again until you hear another pop.
Heat up the beans in the microwave, then heat up the salsa.
Spread the beans on the tortilla and add the egg on top, then spoon the salsa onto everything.
Pull the string cheese into shreds and add that on top, then microwave it all again until the cheese gets slightly melty.
Finally put the laughing cow on top, or instead use a bit of plain greek yogurt or sour cream if you prefer.

You can make this as a breakfast burrito if you prefer but I liked eating it with a fork!

sounds good i have something like that for breakfast dont use the cheese or beans corn tortilla a fried egg with the zero spray top with tomatoe and green onion and tapatio laying off the bread and saving my fat grams for dinner your dose sound better0

Sounds like a great combination. I tend to get stuck on eating the same things, so this would add some nice variety. Thanks for sharing.0
