Sweet potato, black bean and Pesto Tacos:
Roasted Garlic Sweet potatoes:
-Chop the top off a clove of garlic (not the stem end, the pointed end). Put it in foil chopped side up, drizzle with olive oil so it seeps in, sprinkle with salt and pepper, Close the foil air tight. I set the oven to about 450 and let it roast probably 25 min. maybe 30. Let it cool.... It'll be hot but you should be able to squeeze the soft cloves out, if not some prying with a fork and they will fall out of skin and you can mash them with a fork.
-Skin, chop and boil sweet potatoes in water with a little salt until soft
-add garlic a little butter a little nonfat milk and blend till creamy
Black beans with onion/cumin:
Cook them under medium-low heat but add about a half a cup of chopped onion and about a tablespoon of Cumin powder
Pesto:
you can buy store bought but it's not a fraction as good as homemade which is easy:
2 cups basil leaves (packed)
1/2 cup grated parmesan
1/2 cup extra virgin olive oil
1/3 cup pine nuts
3 minced garlic cloves
salt and pepper to taste
in a processor blend the basil and pine nuts....slowly add oil, then garlic, then cheese, then salt/pepper.
I use corn tortillas and I prefer them pan fried in a little oil. I know fried foods are bad but..eh. Just dip the corn tortillas in a deep skillet with enough oil to submerge. It'll only take about 10 seconds. Just make sure it's not too hot or it'll splatter. Let them drain on paper towells.
Fill the tortilla with a little of the sweet potato, black bean. I put pesto on the top as a sauce and eat with a fork but i suppose you could put it in the middle. Just looks better on top. Orange, black and green..great colors, fairly healthy. and MMM good. I also add a little hot sauce for heat and a red color.

No idea! I havent made it since I've been counting haha. It shouldnt be too bad i'd think. Should be easy to figure out by finding the cal count of potatoes, beans, tortillas and pesto (mostly the cheese). the amount of onion or spices and basil for pesto probably isnt enough to fuss about. I also use very little butter0

Yeah pesto is super easy! And it tastes much better homemade, but I usually get lazy. :P0 -
You can make smaller batches of pesto super easy if you have a magic bullet or some mini processor like that.0
