Oh yeah! That lady is amazing! I love it when she talks about what she packs in her kids lunch box. That kid is probably THE COOLEST at school.0 -
I have been vegan for about seven months...I don't really cook large intricate meals very often because my schedule is so hectic, but here are some of my go-tos.
Spaghetti squash and marinara. Its so filling and delicious and you don't even miss the noodles.
I make all my turkey sandwiches with tofurkey and avocado.
Cauliflower steamed and mashed into the same consistency of mashed potatoes.
TLTS (tempeh cut thinly into strips, marinated in bragg's liquid aminos and baked) lettuce, tomato, and avocado.
I would die without naked juice.
Lentil tacos. Cook lentils until theyre mushy, add some low cal bbq sauce, top with some cabbage pieces and put in a low calorie tortilla.
Big pots of veggie soup.
I don't know what I would do without Gardein products as well.0 -

Yes they are so delicious, even vegan-style.
Found the egg substitution too-- It's 1 Tbls Flaxseed Meal + 3 Tbls Water. You mix that and let it sit for a few minutes, then add as you would an egg. So, for this recipe you would use 2 Tbls Flaxseed Meal + 6 Tbls Water for 2 eggs.
I use Bob's Red Mill-- http://www.bobsredmill.com/flaxseed-meal.html, which is also good in smoothies! :happy:0 -

Chocolate Tofu Pudding
1 box Silken Tofu (dessert tofu) (don't drain it)
1/2 c. Cocoa Powder
1/2 c. Soy Milk (or any milk type product)
1/4 c. Carob Powder (bulk stores carry this)
6 tbsp. white sugar (to taste)
Throw it all in a blender or mix it all until relatively smooth. It won't go completely smooth, it's more like an old fashioned cooked pudding.
Makes 8 1/2 c. servings at 77 cals each. Most from the sugar, I'm going to try it with a sugar alternative sometime. The best part is, the tofu makes it seriously filling. A chocolate meal. LOVE it.0 -
I've posted this before but it's totally worth repeating! By far the best vegan mac n cheese recipe I've tried. I'm in love with it!
Baked Mac and Cheeze (from Vegan Yum Yum)
Serves 2-4
1/3 Cup Earth Balance Margarine
1/4 Cup All Purpose Flour
2 1/2 Tbs Low Sodium Tamari or Soy Sauce
1 Tbs Lemon Juice, fresh
1 Tbs Red Miso
1 Tbs Tahini
1 Tbs Tomato Paste
1 1/4 Cup Soy Milk
1/3 Cup Nutritional Yeast
1 Pinch Salt
Black Pepper, to taste
Begin by heating a sauce pan and adding the earth balance. Once melted, add flour and whisk vigorously to form a roux. To this paste, add the tamari, lemon, miso, tahini, and tomato paste and whisk until well incorporated. The mixture should still be thick and paste-like. Then slowly pour in the soymilk, whisking constantly, until it is completely incorporated. Add the yeast and mix well. Turn down the heat and cook the mixture until it thickens, whisking often. (You'll just want it to look like a thicker, cheese sauce- takes just a few minutes) Add salt and pepper to taste.
Pour the "cheeze sauce" mixture over 3 cups of cooked, dry, pasta (like elbows or shells or rotini) in a casserole dish and toss to mix. Top with breadcrumbs and bake at 400º for 25 minutes, or until browned and bubbly.0 -
I don't know if vegans eat yogurt but I think vegetarians do? Anyway, I found this recipe innn... Everyday Food I think and I love it!
Cube red potatoes and boil them until tender, then rinse under cold water until cooled. Toss with a mixture of plain greek yogurt mixed with pesto (any flavor!) and wah-la! Potato salad!0 -
