Delicious low-carb crustless quiche EASY

I found this recipe and modified it a bit... it is SO easy and delicious. I made a portion (divided into 8-servings) and will cut a square and have this for breakfast like an omelet. I'm focusing on low carb so this is perfect for me. I'm sure a substitute can be made for the heavy cream.

I don't like peppers so instead I added broccoli and mushrooms... SOOOOO good!

I added the recipe to MFP and this is the breakdown:

    Substitute for Whipping Cream -

    Milk, Cornstarch and Flour
    For a low-fat, low-carb alternative to whipping cream, whisk together 1 cup of low-fat or fat-free milk with 2 tbsp. of cornstarch. When combined, continue whisking and add 1 tbsp. flour. You can also use almond or rice milk. This substitute works best in recipes that call for whipping cream as a thickening agent.

    Adds a little bit by way of carbs but takes out quite a bit of fat.
    I do wonder how this recipe would be with bacon instead of sausage. Mmmm...BACON!
