Buffalo Chicken Quesadillas

Kelly's Buffalo Chicken Quesadillas
Serves 8

Ingredients:

4 chicken breasts (2 cups shredded)
2 teaspoon cumin
2 teaspoons poultry seasoning
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon pepper
1 medium onion, chopped
½ a bottle Beano’s Buffalo Sandwich Sauce
2 cups Kraft 2% Mexican Cheese Blend
8 tortillas (I use low carb)

Directions:

Place chicken breasts, spices and onion in slow cooker and cook on low for about 4 hours or until chicken is very tender. When chicken is done drain into a strainer and let set until cook enough to shred. Place chicken and onion back in slow cooker or in a pot on the stove and add the Beano’s Buffalo Sandwich Sauce. Heat thoroughly. Heat George Foreman Grill or BBQ grill. Warm tortillas in microwave. On half of a tortilla spread with ¼ cup of the Buffalo chicken mix then sprinkle with ¼ cup of cheese. Grill until cheese is melted and tortilla has grill marks.

Notes:

I actually cooked about double of the chicken and doubled the spices. I used half for this recipe and saved half to make another meal this week. Kills to bird with one stone since you are already using the slow cooker.

I found the Beano’s Buffalo Sandwich Sauce in the deli section at Walmart.

    I added the nutrition. It is low sodium. The recipe maker will not let me add salt.

    A variant I'm going to try would be this.

    Two very low carb tortillas (60 calorie each)l
    Chicken, of course!
    Kraft Fat Free cheese
    Tabasco Buffalo Sauce (they have a new flavor...I'm not talking the wing sauce they make, but actual buffalo flavored Tabasco...check their website, ordered a couple bottles)

    I made this for dinner last night. But I use the flat-out because its with flak seed and whole grains. And I put green peppers in it. Also you can just use a non stick skillet, fold in half and then flip only takes a few minutes.
