Baking season has commenced....

and I hvae just merely tried one or at the very least half of my creation. I did consider to make the healthy kind with margerine, splenda and all that good for you stuff, but that is definately NOT in my cooking vocabulary. I just cant see christm,as cookies as healthy treats. I may make some small batches for me when I HAVE to have a snack but does anyone know where there are ANY recipes that are good fro you as well as great tasting. Nestles website has some(for the baking products). I tried the pumpkin bread already a 1/12 of a loaf slice tops out at 100 calories and is pretty low in sugar but ios jam packed with beta carotene and fiber. If you threw nuts on it would be a tiny bith higher but also higher in protien. My next healthy munchy???? pumpkin carrot bars or pumkin chocolate browines. I just love pumpkin I see it as a wonderfood that is like an unsung hero.

indeed it has! I plan to bake my first gingerbread batch of the season this weekend! And no healthy substitutions for me! They just don't turn out as well if you don't use real butter. :flowerforyou: :drinker:0

Sorry, I don't know of any heathy Christmas cookie recipes. Suggesting portion control is the best I can offer. Wait, I just thought of merengue cookies. You would not be able to make them very far in advance. If you do a search you can find all kinds of recipes for them to vary the flavor.
One I looked at said 29 cal, 11 from fat in 3 cookies. Not bad considering some other types. This is the site I took the cal count from

This isn't a cookie or baking recipe. But since you like pumpkin I thought I'd shared this one with you. It is really good. Instead of tortellini I use penne. The barilla plus are healthier and tast good.
Tortellini with Pumpkin Red Pepper Sauce
1 cup chopped onion
2 garlic cloves, minced
1 to 1-1/4 cups (1 large) chopped red bell pepper
1 tablespoon butter or olive oil
1-3/4 cups canned pumpkin puree (about 16 ounces)
1-3/4 cups (14.5-oz. can) diced tomatoes with juice
1-1/4 cups chicken broth
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 (9-oz.) packages cheese tortellini, cooked, drained, kept warm
Yield: 4 to 6 servings
Prep/cook time: 20 minutes
Saute onion, garlic and red bell pepper in butter in a medium saucepan over medium-high heat for 3 minutes. Add pumpkin, diced tomatoes, chicken broth, basil, salt and pepper. Stir and bring to a boil. Reduce heat and simmer over medium heat for at least 5 minutes. Taste for salt, adding more to taste if the chicken broth and tomatoes weren't very salty.
Ladle sauce over cheese tortellini, well drained, in shallow soup bowls.0 -

My dad has Type 1 diabetes, so I'm always concocting sugar-free stuff for him. I've gotten pretty damn good at faking it.
I use Stevia instead of Splenda, as it holds up better. It doesn't caramelize, but it gets the job done.
Ah! I rattled around my recipe box and found this recipe for low calorie pumpkin-blueberry muffins. I'm not sure of the exact calorie count, but I adapted it from a lemon-blueberry recipe that was 119 cals per muffin, with real sugar.
Ingredients
• Nonstick spray coating
• 1 cup whole wheat flour
• 1 cup all-purpose flour
• 3/4 teaspoons stevia
• 1-1/2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 2/3 cup pure pumpkin
• 1/4 cup egg (or egg beaters)
• 1/4 cup skim milk
• 2 tablespoons applesauce
• 1 cup fresh or frozen blueberries
Directions
1. Spray twelve 2-1/2-inch muffin cups with nonstick spray coating; set aside.
2. In a large mixing bowl stir together flour, stevia, baking powder, and baking soda. Make a well in the center of dry mixture.
3. In a medium mixing bowl combine pumpkin, egg product, milk, and applesauce. Add all at once to dry mixture. Stir just until moistened (batter should be lumpy). Fold in blueberries.
4. Spoon batter into the prepared muffin cups, filling each 2/3 full. Bake in a 400 degree F oven for 20 to 25 minutes or until a wooden toothpick inserted in center comes out clean. Cool in muffin cups on a wire rack for 5 minutes. Then remove muffins from muffin cups Serve warm. Makes 12 muffins.0 -
Try this site they dont give the actual cals and stuff but its from weight watchers and they have the points. You can also go to the website were it will caculate your receipe for you.
