Spanish Chicken and Rice

1lb boneless skinless chicken breast, cubed
1 can Ro-Tel diced tomatoes and green chilies
1 can Kuner's black beans with cumin and chili spices
2 large bell peppers (any color), chopped
4 stalks green onions, chopped
1 tsp minced garlic
1 cup brown rice

Prepare rice according to standard directions and set aside. Mix all of the other ingredients together in a large pan and cook on medium-high heat until chicken is thoroughly cooked. Mix with rice and serve! Simple and delicious. If you want to spice it up a little bit, add a tablespoon of Frank's Red Hot (will increase sodium content some) to the mix. If you don't mind the extra calories, top with fat free sour cream.
