    Canned chicken can be used for soup. You can use some of the leftovers from your quesadilla. I'm not going to give amounts because you really want to make it to taste. I just throw everything in the saucepan and get it "right" as I go along.

    Canned chicken
    Chicken broth or stock
    Pace (or similar) thick and chunky salsa
    OR use picante sauce and add diced tomato (canned or fresh)

    Once you get this tasting the way you want, you can get creative and add:
    diced or sliced carrots (frozen are quicker than raw or you can microwave raw ones before adding to get them softened up)
    cooked rice or lentils or beans or quinoa or anything similar
    any other veggies you have left over that strike your fancy

    You can make your own chicken stock from chicken bones from a rotisserie chicken and some veggie scraps (skins, cut off ends, etc.) I freeze bones and scraps until I have enough to make a pot of stock.
