Chicken & Bean Sprout Salad Lunch Box (370 cal w/pic)
Today's lunch was simple and quick to put together. I've got some leftover bean sprout salad and leftover chicken, some strawberries, some easy-made spinach dip and veggies. I also experimented with making chips out of wonton wrappers! They turned out alright but I cooked them just slightly too long so they're dark brown instead of light brown. You really have to watch them closely after you reach the 5 minute mark in the oven. I think I will season them next time too. This time they didn't need it because they were meant to be dipped. All in all, this lunch box only took 15 minutes to put together and it was good and filling!

1 Grilled Chicken Breast (marinated in buffalo sauce)
8 Wonton Wrappers
1 Medium Carrot
1 Celery Stalk
6 Medium Strawberries
1/2 cup Baby Spinach
2oz Light Cream Cheese
1 Tbl Fat Free Ranch Dressing
1/2 tsp Lemon Juice
1/2 tsp Minced Garlic
1/2 tsp Onion Powder
1/2 Tbl Grated Parmesan
1 tsp Yogurt
1 Serving Kidney Bean Sprout Salad (recipe below)
Preheat oven to 375° F. Slice the wonton wrappers in half to create triangle shapes. Spray both sides with cooking spray then bake for 6-8 minutes. Let cool, divide and add to the boxes. Meanwhile in a food processor, mince up the spinach. In a small bowl mix together cream cheese, onion powder, garlic and parmesan. Microwave for 30 seconds. Add the spinach, ranch, lemon juice and yogurt to the cream cheese and stir until well mixed. Divide and add to the box in a separate container. Slice up the celery and carrot into strips. Divide and add to the box. Slice up the strawberries and add to the boxes. Divide the bean sprout salad and add to the boxes. Slice the chicken breast and add to the boxes.
Kidney Bean Sprout Salad
4 Servings | 200 calories ea
4 cups Bean Sprouts
1/2 cup Large Pitted Black Olives
1 can Kidney Beans, drained and rinsed
1/2 cup Shredded Cheddar Cheese
1 cup Baby Spinach
1 Tbl Parmesan Cheese
1 Cucumber, seeded, diced
8 Tbl Fat Free Ranch Dressing
Toss together all ingredients except dressing. Serve dressing over the top just before eating.

looks super tasty. recipe saved and I have made baked chips out of wonton wrappers. I like to drizzle olive oil on them after about 2-3 minutes in the oven and sprinkle garlic powder, a LITTLE garlic salt, and cayenne pepper on them. So tasty!0
