Veggies!!!

I've only recently added friends on MFP and previously never bothered looking through other's diaries...(kinda feels like I am snooping)...however I have to say..I don't see a lot of servings of veggies. Does this not seem odd to everyone else? That you could go through an entire day or even worse week without seeing a veggie?

I do see people adding a slice of tomatoe or a piece of lettuce to their sandwiches, but honestly those are condiments and not a full portion of veggies!!!

What do you all think? Do you eat veggies and if so how much do you aim for in a day?

    My veggies today: 1 serving okra, 1 serving raw carrots, 1 serving snap peas. (And a stalk of celery and spinach in my egg salad sanwhich ;) )

    I eat 2 cups of green beans and 3 cups of green leaf lettuce EVERY day! greens are so important.

    honestly, most of the time I forget unless I see the word veggie, lol. I have been making a more concious effort to eat more veggies and fruit and less pasta, rice and bread;etc. I try to have something of both everyday.

    I love veggies... I try to eat at least three servings, but some days there are more than others :-)

    I eat 2 full cups of raw veggies throughout the workweek. I love veggies!

    I eat tons of them and am always way over on my fiber count - but I get to eat a lot of food for 1200 calories, which keeps me full.

    Today's veg for me: 100g strawberries, a tomato, a cucumber, 1/4 of a red onion, half a cup of peas, 1/4 of a red pepper, and 2 scallions--I forgot about the pineapple until after I'd started eating. I figure that's about 6 servings all together.

    i'm a vegetarian so I try and eat SOME veggies a day :P
  • I'm a vegetarian, and even I find it challenging to eat a lot of green veggies. It's not that I don't like them, I just get lazy. Today, I ate 1 1/2 cups of arugula as my greens, but I know it's not enough. I did eat bell pepper and beans though. I had every intention of making the collards I bought today, but today has been a low energy day for me, so I didn't feel like cooking.

    I eat lots of veggies. I've been a vegetarian for 12 years. I like to steam a whole onion chopped up and a whole zucchini or yellow squash sliced. Then I drain the water and add a can of low sodium soup and eat it all! I have a salad for lunch too.

    I have noticed there are a lot of people that don't eat much veggies and or fruits. I want to tell them they will feel much healthier and more satisfied if they do! Kind of tough...don't want to push my ideas on anyone.

    Sometimes I don't add my veggies in to my diary - the few calories they add in sometimes are just not worth my search/find effort. If that makes sense. But I sure do eat lots!

    So maybe that is true for others as well.

    I try to eat 1 big salad every day (usually for lunch), always have at least 1 cup (which is 2 servings) of veggies (not corn or potatoes, lol) with dinner, and often incorporate more into eggs for breakfast. But yes, it does bring out the "mom" in me when I don't see veggies in someone's day. (not that it's *really* any of my business....)

    Good point...I never thought of that! I guess I'm just surprised at how little veggies I see recorded... I try not to be pushy but goodness i guess the old fashioned "eat your veggies" comes to mind!

    I think there are some people on here who don't log their fruit and veggies for various reasons. Also for me for example a lot of my food is "recipe" based - so that "Summer salsa" includes mangos, pineapple, capsicum and onions and my "Veggie Tofu Satay" I'm having for lunch includes carrots, cabbage, courgette, mushrooms, eggplant, red peppers, red onions etc. so that doesn't exactly show up but I am eating lots of vege :)

    Ooooooh, I cringe to think you were looking at my red velvet cake binge weekend food diaries.
    I aim for at least 5 fruits & veggies a day. I know that technically it should be that many veggies, but sometimes I have a hard time hitting it because I'm so hungry I want to reach for the carbs & peanut butter because it's so satisfying.
    We've become so meat & carbs at my house that part of my journey is trying to get my whole family to eat enough veggies. The earlier poster's comment regarding recipes is also spot on because sometimes one recipe serving might hit a number of servings of veggies. e.g. a veggie loaded frittata or soup.

    That sounds really good your "soup idea" in the fall I am going to give it a try. Have you tried carmelizing the onions in a little EVOO?

    While I am not vegetarian....I have been choosing more and more veggie alternate choices and limiting my heavy meats...

    I always have my fiva-a-day-plus! Love salads and veg and plenty of fruit.
    On 800 cals per day I have to be very astute at getting them included but it's a must in my book!

    I eat veggies. Some days more than others, but I can't remember the last time I went all day without any veggies. I do go days without fruit often. Yesterday I had tomato (a whole one) for lunch, and beans (red & white kidneys) with peppers, onions and carrots for dinner. Today I have leftover cabbage and jicama slaw and leftover beans & veggies from last night. Not sure what dinner will be yet. Breakfast is almost always a glass of soy milk, but not sure if that counts as a veggie or not.
  • I eat veggies like, erry day. Some days I go over. I do see some people without veggies or fruit, but I just ignore it and let them do what they like.
