I am cooking dinner for my in-laws including Grandma, I was planning on making asian fish, rice and stir-fry veggies, then my mother-in-law said she wanted something with pasta. Keep in mind my husbands family is itailan. His great grandparents are from Italy. And Grandma is diabetic. So I am trying to keep that in mind and of course my eating low calories. Dinner is at 6, I have to go shopping around 3 reciepes would be awesome.

Thanks:flowerforyou:

Well cook everything you mentioned and for everyone else make a big bowl of pasta.

I usually do angel hair pasta with some oil and seasonings and mix it all and it taste great.

The seasonings I use everything I have.

The other night I made a really good recipe that called for stewed tomatoes, turkey sausage, white beans, and wheat rigatoni. Basically, you cook the turkey sausage, drain the grease if there is any, add the stewed tomatoes and white beans and then add the cooked pasta in. It was really good and fairly low call (I think like 320 calories for two cups).

I wouldn't throw off your entire plan though. I agree with mbb. Make the stir fry and substitute some wheat angel hair pasta for the rice. Granted, that's not the most Italian way to use pasta, but it should give your MIL enough of a pasta fix that she will be happy.
